Candied Citrus Peel
3/4 cup sugar
1/4 cup honey (or agave)
3 large navel orange peels, or equivalent in other citrus fruit
dash of salt
1/4 cup water
icing sugar (optional)

This traditional holiday treat is scruptious! Treat your family and friends by using organic fruit and sweeteners.
Carefully remove the peel from the citrus fruit. Place peel in water to cover. Bring to a boil and simmer for about 30 minutes. Some varieties of oranges and grapefruit have a bitter tang to the peel. This bitterness can be removed by repeating the simmering process 2 or 3 times. Navel oranges don't have this problem.
Drain and cool the peel. Cut the peel into thin strips between 1/8 and 1/4 inch thick. Mix the sugar, honey and water. Drop the peel in and simmer for 20 minutes, until the syrup is clear. Cool it in the syrup. Let it sit for a few hours until the syrup is slightly absorbed into the peel. Warm, drain, and spread on wax paper until dry. If desired, roll in icing or fine granulated sugar.
