Easy Crockpot Cabbage and Potato Soup
¼ cup butter, or coconut oil
3 cups diced onion
½ medium green cabbage
4 cups diced peeled potatoes
2 tsp sea salt
1 tsp freshly ground black pepper
2 tbsp nutritional yeast, optional
2 bay leaves
Heat skillet over medium heat, add butter or oil.
Sauté the onion and garlic until the onions are soft and golden, about 5 minutes. Scrape into a 3 quart Crockpot.
Add remaining ingredients to the Crockpot with enough water to just cover. Set to cook for 8 hours on medium. Cover. Taste and adjust seasonings before serving.
