Bran Muffins
1 1/2 cup oat or wheat bran
1/2 cup boiling water
1/4 cup vegetable oil
1 egg (or 1 tbsp ground flax)
1/2 cup honey
3 tablespoons soy milk powder or buttermilk powder
3/4 cup water
1 1/4 cups wheat flour or 1 2/3 cups spelt flour or 1 1/8 cup rice flour
1 1/2 tsp baking powder
pinch salt
1/2 cup currants, raisins or dried cranberries
Instructions:
Soak the bran in the boiling water for 10 - 15 minutes. Combine oil, egg, honey, milk powder and other water and add to the bran mix when it has finished soaking.; blend well. Combine the flour with the baking powder and salt and blend into the bran mix. Stir in the dried fruit and spoon into 18 - 24 unbleached paper baking cups in muffin tins. Bake at 350F for 20 minutes or until a toothpick inserted into the centre of a muffin comes out dry. Cool on racks. (This mix can be kept refrigerated for 7 - 10 days in a well sealed container. Stir the mix again before using.) Best fresh out of the oven.
