Asian Inspired Salad
1 head romaine lettuce
2 tsp. vegetable oil
2 tsp. toasted sesame oil
2 tsp. minced fresh ginger root
2 cloves garlic, minced
1 tsp. chili powder or 1 tbsp. minced fresh chili pepper
1/4 cup cashew pieces
3 chopped green onions
1 1/2 cup snow peas, bite sized
1 1/2 cup mung bean sprouts
4 tbsp. brown rice vinegar
1 1/2 tsp. maple syrup or honey
1 1/2 tsp. tamari
Instructions:
Wash the lettuce, tear it into bite sized pieces and place in a salad bowl. In a large frying pan over medium heat sauté the garlic, ginger, chili and cashew pieces until golden brown. Add the green onions, snow peas and mung beans and cook over low heat 2 minutes. Remove from heat. Whisk together the last three ingredients and blend into the frying pan ingredients. Toss the contents of the frying pan with the lettuce and serve immediately. Serves 4
