For-what-ails-you Yummy Kale Soup
2 cloves garlic, minced
2 tsp minced fresh ginger
3 - 6 kale leaves, chopped into thin strips
2 medium potatoes, cut into 1/2” cubes
1 small zucchini, julienned
1/2 small hot pepper, minced
3 tbsp minced fresh cilantro (optional)
2 tbsp tamari
2 - 3 tbsp barley miso ( to taste)
Instructions:
In a medium sized pot, heat 2 tbsp water over low heat. Sauté the garlic and ginger in the water until the garlic begins to soften ( about 3 minutes). Add 4 cups water along with the kale, potatoes, zucchini and pepper. Cook over medium heat for approximately 15 minutes until the kale is soft. Remove from heat and add the cilantro and tamari. In a small bowl or measuring cup, mix the miso with a couple of tbsp of the hot broth until the miso is well blended; then add to the soup pot. If necessary you may put the pot back on the heat to reheat it at this point but be sure not to bring it to a boil as this kills the medicinal qualities of the miso. (More or less water may be added, depending on personal preference for thick or thin soup.) Serve with rice crackers. Serves 2
