Roast Gluten with Mushrooms
6 dried shitake mushrooms
2 pkg thawed gluten
4 cloves garlic, crushed
1 tsp finely grated fresh ginger
2 tbsp sesame or olive oil
1 cup water
2 tsp honey
2 tbsp chopped fresh coriander leaves
Instructions:
Soak mushrooms in hot water for 30 minutes. Squeeze dry, cut off and discard stems, cut caps into quarters if they are large. Cut gluten into small pieces. Fry garlic and ginger in the oil for a few secons, then add gluten and stir fry until lightly browned. Add mushrooms, water and honey. Cover and simmer about 10 minutes. Sprinkle with chopped coriander and serve with rice.
