Lao Green Papaya Salad
2 1/2 cups shredded green papaya
4 medium red and green Serrano or Jalapeno chilies (or to taste)
2 large cloves garlic, skinned
2 cups lightly steamed green beans, cut into 1'' pieces
2 cups cherry tomatoes, cut each in half
2 tbsp ground peanuts
4 cups shredded cabbage and iceberg lettuce leaves
Dressing:
1/4 cup lime juice
2 tbsp toasted sesame oil
2 tsp tamari soy sauce or braggs
1 tbsp agave or raw sugar
1 tsp salt
Instructions:
Using a mortar and pestle or food processor pound chilies and garlic to coarse texture. In a large bowl combine the papaya, green beans and stir well. Add the garlic and chilies, the peanuts, dressing and mix well. Toss with cabbage and lettuce leaves and serve immediately. Serve with steamed sticky rice. Make about 4 1/2 cups of salad, about 4 servings.
