Asian Tofu Salad
You will need...
2 Tbsp olive oil
2 Tbsp rice vinegar
1 Tbsp honey
2 tsp tamari soy sauce
1 Tbsp toasted sesame oil
1/2 an English cucumber, thinly sliced
1 tsp fresh ginger, minced
1/2 tsp salt
8 cups mixed salad greens
2 carrots, julienned or grated
1 14oz firm tofu
Instructions:
Cube the tofu and lightly saute in the sesame oil and tamari. Cool and set aside while you combine the remaining ingredients.
Once prepared, top with the tofu and some toasted sesame seeds and serve.
