Wheat Berry Salad

Ingredients:
Dressing: combine and set aside
1/3 cup olive oil
2 Tbsp lemon juice
2 Tbsp apple cider vinegar
1/2 tsp basil, oregano and dill
pinch of mint leaves
pinch of cayenne
1 tsp maple syrup
1 tsp minced fresh garlic
1/2 tsp salt

1 cup wheat berries

2 minced green onions
2 cups grated carrots
2 stalks finely minced celery
1/4 cup toasted sunflower seeds
1/2 cup frozen corn, thawed
1/4-1/2 cup crumbled feta cheese

Directions:
Boil wheat berries in ample water until soft, about 1 hour. You can soak your berries overnight for a plumper, softer kernel. You can also cook more than you need and freeze them for use later. Cook until soft and chewy but not mushy or pasty. Can be used in place of rice in other recipes.

After the wheat berries are cooled, add the rest of the salad ingredients. Then add the dressing and toss. Serve or chill until needed.
