Ingredients:
1 large onion, finely chopped
2 tbsp. cooking oil
1 carrot grated
1 cup sliced mushrooms
3/4 cup barley, washed and drained
1 cup vegetable stock
1/2 tsp. dried marjoram
salt and pepper to taste
Directions:
Gently fry the onion in oil till translucent. Add the carrots and mushrooms. Cook for 3 - 4 minutes till veggies begin to soften. Add barley and stir to make sure it is coated. Put mix in a medium sized casserole dish. Add the stock and seasonings and stir well. Cover and bake at 350F for 1 hour or until tender.
Variations: substitute red pepper for mushrooms for a sweeter dish
